- 1–2 cups curly green kale, de-stemmed and finely chopped
- 4 ripe avocados
- 1/2 cup diced onion
- 1/4 cup diced fresh cilantro
- 1 jalapeño, de-seeded and diced
- 1 tsp sea salt
- 4 cloves garlic, minced
- Juice of 1 lime
- Optional: black pepper or chili flakes for extra spice
For the jicama dipping fries:
- 1 medium-sized jicama, peeled and sliced into sticks
- Juice of 1/2 lime
- Sea salt and chili powder to taste (approximately 1/4–1/2 tsp of each)
Instructions
- Place a steamer basket into a fitted pot with 1 inch of water and bring to a boil. Add the kale, cover, and steam until it becomes vibrantly green (about 2–3 minutes). Remove and place on a kitchen towel to pat dry. Allow to cool, then finely chop before adding to the guacamole.
- While the kale is cooling, combine the avocados, onion, cilantro, jalapeño, sea salt, garlic, and lime juice in a large bowl. Mash and mix with a fork until creamy and well combined. Once cooled, fold in the finely chopped kale.
- For the jicama fries, simply peel and chop the jicama into fry-sized sticks. Drizzle with lime juice, then sprinkle with sea salt and chili powder for an added kick.
