Ingredients

For the guacamole:

  • 1–2 cups curly green kale, de-stemmed and finely chopped
  • 4 ripe avocados
  • 1/2 cup diced onion
  • 1/4 cup diced fresh cilantro
  • 1 jalapeño, de-seeded and diced
  • 1 tsp sea salt
  • 4 cloves garlic, minced
  • Juice of 1 lime
  • Optional: black pepper or chili flakes for extra spice

For the jicama dipping fries:

  • 1 medium-sized jicama, peeled and sliced into sticks
  • Juice of 1/2 lime
  • Sea salt and chili powder to taste (approximately 1/4–1/2 tsp of each)

Instructions

  1. Place a steamer basket into a fitted pot with 1 inch of water and bring to a boil. Add the kale, cover, and steam until it becomes vibrantly green (about 2–3 minutes). Remove and place on a kitchen towel to pat dry. Allow to cool, then finely chop before adding to the guacamole.
  2. While the kale is cooling, combine the avocados, onion, cilantro, jalapeño, sea salt, garlic, and lime juice in a large bowl. Mash and mix with a fork until creamy and well combined. Once cooled, fold in the finely chopped kale.
  3. For the jicama fries, simply peel and chop the jicama into fry-sized sticks. Drizzle with lime juice, then sprinkle with sea salt and chili powder for an added kick.
  4. Serve immediately, using the jicama fries as a refreshing, crunchy dipping vehicle for the guacamole.
