COZY CHIA SEED PUDDING

Serves 2

Ingredients:
  • 1 cup non-dairy milk
  •  cup chia seeds
  • 2 tablespoons raw honey or 2 to 3 drops stevia (optional)
  • ½ teaspoon vanilla extract
  • ¼ cup strawberries
  • Dash of cinnamon
  • Dash of ground ginger

 

 Instructions:
  • In a small saucepan, add your non-dairy milk over a medium/low flame.
  • Warm the milk for 2 to 3 minutes.
  • Make it as hot as you can stand it without boiling.
  • Add your chia seeds to a small bowl.
  • Add the warm milk and remaining ingredients.
  • Mix thoroughly and allow it to gel for 3 minutes.
  • Top your chia pudding with berries.
  • Serve immediately.

 

Serving Tip: If you would like to serve this cold, mix all your ingredients into a small bowl. Stir well and let it set for 5 to 7 minutes. Top with fresh fruit and enjoy.
