Rich, creamy, and naturally sweetened — no sugar crash required.
If you've been looking for a dessert that satisfies a real chocolate craving without spiking your blood sugar or leaving you feeling sluggish afterward, this is it. No cream. No refined sugar. No compromise on flavor.
At Princeton Integrative Health, we believe that nourishing your body and enjoying your food aren't competing goals. This mousse is proof of that.
The Secret Ingredient
The base of this recipe is avocado — and if that gives you pause, we understand. But when mashed with cocoa powder, avocado becomes something remarkable: a silky, creamy foundation that mimics traditional mousse texture without any dairy or eggs. The flavor disappears entirely. What you're left with is pure, rich chocolate.
Avocado brings more than just texture. It's one of the most nutrient-dense foods you can eat — loaded with heart-healthy monounsaturated fats, potassium, B vitamins, and fiber. It's the kind of ingredient we love recommending because it works hard nutritionally while letting you enjoy every bite.
Why Every Ingredient Earns Its Place
Cocoa powder delivers deep chocolate flavor alongside a meaningful dose of flavonoid antioxidants, which support cardiovascular health and protect against oxidative stress. It also provides magnesium — a mineral critical for sleep, muscle recovery, and nervous system function that many of our patients are quietly deficient in.
Chia seeds do double duty here: they thicken the mousse to a pudding-like consistency and contribute soluble fiber that slows sugar absorption, keeping your blood sugar steady long after dessert is done. They're also one of the best plant-based sources of omega-3 fatty acids.
Dairy-free milk keeps the texture light and the recipe accessible for patients with dairy sensitivities — something we see frequently in our practice.
Maple syrup (optional) adds a gentle touch of sweetness from a less-processed source than refined sugar. When paired with the fat and fiber already in this recipe, its glycemic impact is minimal.
The Recipe
Serves 2
Ingredients
- 1 ripe avocado, mashed
- 1 tablespoon cocoa powder
- 2 tablespoons chia seeds
- 1 cup dairy-free milk
- 1 tablespoon maple syrup or other natural sweetener (optional)
Instructions
- Mash the avocado in a bowl until smooth and creamy — take your time here, a smoother mash means a better final texture.
- Add the cocoa powder, chia seeds, dairy-free milk, and maple syrup if using.
- Mix thoroughly with a fork until everything is fully combined.
- Let the mixture rest for 10–15 minutes to allow the chia seeds to absorb the liquid and thicken.
- Stir once more and serve immediately, or refrigerate for 30 minutes for an even denser, colder mousse.
Make It Your Own
Top with fresh berries for added antioxidants, a sprinkle of unsweetened coconut flakes, or a handful of chopped walnuts for extra omega-3s and satisfying crunch. All three work beautifully together if you want to turn this into something a little more special.
This mousse keeps well in the refrigerator for up to three days — making it an easy option to prep ahead and reach for when the afternoon craving hits.
No blender required. Ready in under 20 minutes. And genuinely delicious.
